stable molecules, electrons associate in pairs. However, radiation
from the sun can result in the removal of an electron from a molecule
and the formation of free radical. Carotenoids as antioxidants limit
free radial damage by donating electrons to quench, or neutralize,
the oxidant radicals.
In human nutrition, carotenoids, as antioxidants, serve to protect
cells from the danger of free radicals that may be produced by the
body during metabolism, or by cigarette smoke, sunlight, radiation,
pollutants, or even stress. Our body produces tens of thousands of
free radicals every second. If left unchecked, these free radicals can
